I started looking for juicy chicken dishes before moving on to beef and pasta recipes. Then I fell into a deep Pinterest hole, and my grocery list got longer and longer. From cheesy fiesta chicken and cajun shrimp to classic baked ziti and a kid-friendly tater tot casserole, there’s no way you won’t find something to try on this list of 50 casserole recipes. But I do miss a bit of crunch sometimes, which is why this recipe is such a winner. All you’ll need to do is add a layer of crispy onions to the top once it’s cooked through. They’ll add great texture as well as heaps of flavor.
11. Cowboy Casserole
The idea behind cowboy casseroles is that they should be super filling, warm and comforting, and packed with western flavors. Even though this is called “ground beef” casserole, you could so easily swap that out for pork or turkey if you want it a little leaner. I’m not sure why, but I never buy summer squash. I think I mostly gravitate towards zucchini and butternut, which is a shame because this stuff is so sunny! Other than corn, this might be the brightest dish on the list. Yellow squash tastes just like zucchini, and the two are pretty much interchangeable.
26. Ham and Cheese Casserole
You might’ve noticed that many of these casserole recipes use cream of “something” soup for richness and flavor. I’m ok with that, but if you want something a bit lower in sodium, this is the recipe for you. Instead of the canned stuff, you’ll make a simple creamy sauce of your own using milk, cream, salt, pepper, onion powder, and garlic powder.
27. Dump-and-Bake Shrimp and Rice Casserole
I’m all for shortcuts, and this recipe has a few great ones! Again, you’ll use cream of mushroom soup for a nice sauce and added flavor, plus frozen pre-diced onions to save on time. As much as I love meat sauce with Italian seasonings, I prefer Tex-Mex style chili with a bit of spice, corn, and beans. This is a fabulous way to use up leftover chili and is also perfect if you don’t want it with rice. I like to add roasted sweet potato to make it extra starchy, along with lots of extra jalapeños!

I love pizza, but societal norms suggest we shouldn’t have it every day. This might not be pizza, but it has all the same flavors, which should be enough to fool your tastebuds!

Since that steak is pretty expensive, I like this cheaper version of a cheesesteak. It uses ground beef, so you’ll still have that rich flavor, and it also mixes nicely into the pasta. That being said, if you want it to be more authentic, try this recipe. It uses rib-eye, which is a pricey cut, but since you’ll slice it super thin, a little goes a long way.
31. Italian Sausage Breakfast Casserole
Bulk Italian sausage is available in most supermarkets these days, and you can usually find it at the butcher counter, too. When it’s cooked, it’s a lot like ground beef; only it has the seasonings mixed in already. I’ve also made this using frozen sausage patties, which I broke up with a wooden spoon. Similarly, you can buy regular sausages and simply remove the casings. This is an excellent option if you want to use something different, like chicken sausage.

Sweet potato casserole works well with chicken, turkey, pork, and beef. It’s savory yet sweet, with a lovely pecan crunch topping that would even taste great with some flaky fish. Since mashed sweet potato freezes well, I recommend making a big batch and storing what you don’t use away for another day. A Reuben is a classic sandwich made using corned beef, Swiss cheese, sauerkraut, and Russian dressing. It’s almost always served on rye bread, and it needs to be grilled/toasted. Being a potato lover, I probably make this casserole recipe once a month at least. It’s essentially mashed potatoes with all the fixings! The ingredient list for the recipe is pretty long, but everything serves a purpose, so try not to leave anything out. Blend that together and then mix in the chicken, broccoli, and cheese. For the best finish, use Ritz Crackers for the topping. They add so much incredible buttery flavor.

This is one of the easiest on the list and is one I’ve made a few times when I was too lazy to make anything else. The truth is, I love ramen noodles and have them often as a snack. But if you need something a little more filling, just add in some frozen veggies, leftover chicken, and cream of chicken soup.

In my house, we never have leftover everything bagels. When they’re fresh, I’ll have them for breakfast, lunch, and dinner! I like to roast my cauliflower to enhance the flavor, but if you choose to boil or steam, be sure to drain it well. Any excess liquid will ruin the cheese sauce.
48. Cajun Shrimp Casserole
As with most Cajun recipes, this casserole is full of onions, garlic, lemon, pepper, and plenty of spice. If you don’t like okra, just leave it out and maybe throw in some celery if you want. To boost the heat, go ahead and add a few splashes of hot sauce, and I also like to use Old Bay when I’m cooking shrimp.
49. The Pioneer Woman’s Twice Baked Potato Casserole
Though you can technically mash any potato once it’s cooked, the best options are either Russet or Yukon Gold. Some other varieties can turn too dry or too mushy. If you have the time, baking the potatoes will help lock in the nutrients (which you’ll typically lose when boiling them). Also, if you don’t mind the added texture, why not leave the skins on too? That’s where most of the good stuff is!
50. Traditional Lancashire Hotpot
This recipe is more than 200 years old, and though it originated in the North of England, you’ll find variations of the “hotpot” all over the UK. At its core, it’s a slow-cooked lamb casserole (use beef if you prefer) made with onions and carrots. There’s a simple gravy, and the whole thing gets topped with sliced potatoes.
