Making homemade potato wedges in your air fryer is quick and easy.  Let me show you how! These wedges are crisp on the outside and soft and pillowy on the inside, just like a good potato wedge should be. A lot of recipes will tell you that you need to soak your potatoes first to achieve this signature crisp but I must admit the results I’ve seen after soaking my potatoes is negligible at best. Skip the extra time and fuss and simply keep your potato wedges in a single layer without touching.  That’s my secret! Serve these potato wedges as a tasty side dish OR make the entire plate of wedges the meal.  I won’t judge. And if you get a chance, serve them with sour cream and sweet chilli sauce.  It’s to die for!

WHICH POTATO IS BEST FOR POTATO WEDGES?

You’ll want to use a good starchy roasting potato when making wedges.  In Australia they’re sold as “white potatoes” or “brushed potatoes”.  If in doubt try Sebago, Russet, Yukon Gold etc.  Also try and pick larger potatoes as they will make larger wedges!

INGREDIENTS

Putting these potato wedges together could not be easier.  Here’s what you’ll need (full measurements in the recipe card below)…

PotatoesPaprikaGarlic PowderOlive Oil Salt

OPTIONAL to serve - Ketchup, BBQ Sauce, Aioli or my favourite - sour cream and sweet chilli sauce.

INSTRUCTIONS

Wash potatoes thoroughly (there’s no need to peel them) and place on a chopping board.  Cut each potato in half lengthways, then cut each half in half again lengthways.  Finally, cut each piece in half again lengthways.  You should have 8 wedges from each potato – each a similar length and thickness. Place potato wedges, oil, paprika and garlic powder into a large bowl & mix well.  Spread wedges into a single layer in the air fryer basket or tray, making sure to keep a little space between them. Cook on 200C / 390F for 20 minutes, flipping half way, or until golden and crisp.  Sprinkle with salt and serve immediately.
